- 1 3/4 c.fresh corn kernels
- 1 c.jasmine rice, cooked
- 1/2avocado, finely chopped
- 1/4 c.chopped yellow pepper
- 1/4 c.chopped green pepper
- 1/4 c.chopped red onion
- 4 tbsp.olive oil
- 3 tbsp.chopped fresh cilantro
- 2 1/2 tbsp.lemon juice
- 1/4 tsp.sea salt
- 1/4 tsp.freshly ground pepper
- 1/4 tsp.ground cumin
- 6medium vine tomatoes, whole
