Cooked bananas have a fragrant juiciness that’s ideal paired with salty biscuits and dark chocolate. This fun dessert is best made over a barbecue or campfire and enjoyed outdoors
Ingredients
- 4 ripe bananas
- 50g dark chocolate chips
- 25g mini marshmallows
- 4 digestive biscuits, crushed
- mixed nuts, chopped
- whipped cream or ice cream, to serve
- 4 maraschino cherries, optional
Method
- STEP 1
Cut the bananas along one side through the peel so you start to cut into the flesh, but don’t go all the way through. Gently open out along the cut to make a small pocket for the fillings. Stuff the bananas with the chocolate chips and marshmallows, then double-wrap in foil, leaving a small gap where the fillings are to allow the marshmallows to expand.
- STEP 2
Put the banana parcels into a cooler part of the coals of the barbecue, or in the oven at 200C/fan 180C/gas 6. Cook for 15-20 minutes or until the parcels are soft when gently pressed.
- STEP 3
Open the foil parcels to reveal the blackened bananas, then top with the crushed biscuits, the nuts, whipped cream or ice cream and a cherry, if you like.
